Nightingale Cider – The Optimists
“Nobody does more than the Nightingale Cider Co to demonstrate that diversity, complexity and playfulness is not solely the domain of those using big, bold, phenolic bittersweet apples. A proud champion of the Eastern Counties cider tradition, Sam Nightingale, together with brother Olly, uses a range of dessert and culinary apples .. to make fresh and floral ciders” Modern British Cider 2021
This year’s ‘The Cat in the Glass’ annual collaboration cider is with Nightingale Cider from Kent. It is fitting, therefore, that they also feature at our November Cider Club. Sam Nightingale has run Gibbet Oak Farm near Tenterden, in Kent, since he moved back home in 2015, swapping a career in sound recording for a life filled with apples. Once a fruit farm run by his father and grandfather before him, Sam put all his efforts into shaping and cultivating his orchards, turning Gibbet Oak into a cidery. In 2020 Nightingale’s added a new cider to its range, a single variety Discovery cider, carbonated, and sold in kegs and cans. Called Wild Disco—due to it being fermented with nothing but the wild yeast that lives on the apple skins. Since then Nightingale Cider has been in the forefront of leading the modern renaissance of aspirational cider.
