Very fine two-year old Mistelle
A combination of fresh pressed juice and perry eau de vie, old casks and time! The result is about as complete a taste of orchard culture as you could ask for.
Made with hand picked fruit from a 115 year old traditional perry pear orchard in Chew Stoke.
With pears such as Holmer, Hellens Green, Pint & Blakeney Red, Wilding had enough to make a 1,000 litre tank of perry which was distilled to make a single cask of Pyrus, along with 150 or so litres of pear juice from Barland orchard in 2022 which was of extraordinarily high quality. A Rye Whisky cask was selected and the mixture spent 26 months maturing.
Deeply complex and delicious. Layers of aroma and flavour: caramel, golden raisins, baked pear, baked plums, custard, brandy, mace, cinnamon, anise. All of the aroma is well supported by the luscious sweetness and the bright, mouthwatering acid.
Drink after dinner with cheese, nuts and dried apple, or before dinner with an ice cube and dash of soda. 500ml. 24.8%.
