Description
A blend of 50% Dabinett, 25% Harry Masters Jersey and 50% Major all pressed in 2019. These three bittersweet varieties sing in perfect harmony, just like the blackbirds that provide the soundtrack to our cider making. 7% abv & 500ml.
Contains natural sediment so pour slowly, or tip upright before opening and savour the richness of the lees.
How to serve: very lightly chilled, can be drunk at room temperature
The aroma: wooden barrels, dried apple skins and hints of leather and tobacco
The taste: Dabinett brings bitter orange pith and woody cinnamon and clove spice, whilst the Harry Master Jersey gives ripe yellow stone fruit and plenty of mouth drying astringency. The Major meets in the middle of both. The apple is there but it’s aged and smooth, with a delicate balance of bitterness, sweetness and very mild acidity. This is a cider to sip and savour the rich mellowed tannins.
The finish is off dry due to a small amount of the sugar added for bottle conditioning not fermenting. 500ml. 7%.
