Description
A blend of 80% Dabinett (from 2019) with 20% Crab apples (from 2020). The result is a handsome marriage of well-behaved tannins and a little wild youthful edge. Just like our beautifully brilliant Border Collie: Indy. Bottle conditioned with 10g/l of molasses, open and wait 30 seconds before pouring to allow any disturbed sediment to resettle. Pour slowly. 7.5% abv& 750ml.
How to serve: lightly chilled
The aroma: red apples, spiced orange and cinder toffee.
The taste: dried apples and citrus peel dominate the palate, with a background of juicy acidity. The molasses has added depth and baked sugar to the fruit. The finish is bone dry and brisk, leaving the palate clean and thirsty for more. 750ml. 7.5%.
