Description
Sum of the Parts is our foray into the risky business of long barrel ageing and fractional blending, based loosely on the solera systems used in sherry production. Our solera began in 2017 and contains ciders from that vintage through until 2023, almost exclusively the historic, high acid, intensely complex variety Foxwhelp.
Act 3 brings together the very oldest components of the solera into an intriguing, cerebral creation.
Vivid orange-gold in colour, the nose offers up sweet wood, orange oil, purple flowers and subtle smoke. In the mouth it’s plushly textured, with the once raw acids beautifully polished over time, serving to intensify the flavours of our candy, blueberry, mulberry and candied citrus.
The scent of blue flowers, violets predominantly, play across the palate which is noticeably saline and which reveals a hint of tannin and smoke on the finish.
