Description
A very, very, very rare single variety perry made with Coppy perry pears; a variety that was rediscovered by Tom Oliver! After a single adult tree – the only one known in to exist in the world – was certified as indeed the Coppy, some young trees were grafted, & this is the first ever Perry made from these young trees.
Pours with a golden fizz, with classic melon/gooseberry nose. Tangy, citric acidity braces a trip through citrus land; going from rhubarb & gooseberry, through melon & lychee up to elderflower. Very full in the mouth, but kept ever fresh by the zingy acidity. Fermented with wild yeasts, & matured in oak ex-whiskey wooden barrels, then conditioned over 18 months in bottle, with a sandstorm of sediment layering the bottom of the bottle (chill upright, & leave sediment behind when poured). Sparkling medium dry perry. 750ml. 6%.
