In short a young, single fermentation version of Outcider. Our aim was to contrast and compare the edges of these two spontaneously fermented ciders before and after Malolactic fermentation and show how the complexity changes when you change malic acid into lactic acid creating a milkier mouthfeel. Single variety high acid apple leaning heavily on the native yeasts present on its skin and in the cider works.Tart, fresh and semi-dry, green apple skin, sharing great similarities to these our our spanish cousins and their Sidra. Apples- Bramley. Maturation – Medium (6-12 months). Vegan. Gluten free. 4.5% .
