Description
Gilly is a new variety – both to us and generally, bred and then propagated in the 1990s. It’s an early season light sharp, and this was our first season fermenting it. This single barrel bottling of 300 bottles has us very excited for the future. Gilly makes up 90% of the juice, amplified by an addition of 10% Foxwhelp, in this cider of roaring acidity and fruit, tempered by the fermentation in the ex-Raison d’Être barrels. A delight to drink, with flavours zipping across your palate. The barrel comes through in this cider, making this an ideal drink for those who enjoy the wisps of smoke in the flavour profile. 750ml. 6.4%
