Still, Bone Dry Fine Cider
A blend of Harry Master’s Jersey (35%), Ellis Bitter (30%), Yarlington Mill (15%), Foxwhelp (20%) apples; each from a different traditional orchard, each of which is over 30 years old. They were co-fermented in stainless steel tanks initially, before half was racked into old oak barrels (ex red wine, on their second fill of cider) for three months maturation.
Bottled under cork a year after pressing, this is in many ways an old fashioned blended cider, no messing about. The aromas are heady & complex, with notes of orchard, baked apple, barrel, tobacco, leather, & peach jam. The tannins are soft but full & the characteristic Foxwhelp acidity is mellowing nicely, keeping some raw freshness while integrating. Great paired at the dinner table. 750ml. 6.9%.
