Our first harvest activity of the year was late August where we collected the windfalls and a large amout of George Caves. These later apples were a little over ripe but carefully hand picked. The juices were full of flavour but without too much acidity. Half the juice was wild fermented in steel and half pumped into the recently emptied Pomological barrel. The result is a cider that is light and fruity on the nose with a soft rounded flavour from the barrel. 750ml.

Sparkling cider macerated on pulp. Vealthy, Cox Pomona, wild seedling. On the nose – A burst of apples, crisp and acidic. On the palate – A prominent acidity with hints of smoke and white peach. A wine like quality but very clearly apples. Shellfish, oysters and salted pistachios. Serve chilled.…
