70% Frederick, 30% Perry All from Court of Noke. Home orchard and Boymar Orchard
The first of our bottlings from 2022. This is exciting and like no cider we’ve made before, it has indeed got 30% perry blended in and it’s fruity and sharp and reminds us of gooseberries. The Frederick apple and seemingly other ciders from these orchards carry a prominent vegetal characteristic, reminding me of young nettles, slightly peppery. We were not so keen on the Frederick by itself, but the pears rounded it off nicely. We have never made a cider/perry so much like a white wine. Medium Dry, lightly sparkling, 750ml. 6.5%.
